4drain the beans in a sieve over the sink, and tip them into a bowl with the chipotle sauce, vegetables and half of the cheeseSummary sheet
5mash everything together with a fork or potato masherSummary sheet
6lay out four tortillas, then spread them with the toppingSummary sheet
7top the tortillas with the remaining chees then another tortilla, and press togetherSummary sheet
8heat the tortillas in a pan on a medium heat, then griddle for one to two minutes on each side, until the quesadillas are golden and the cheese is meltedSummary sheet
9finely chop the red onion, tomatoes, coriander and jalapenosSummary sheet
10mix together the red onion, tomatoes and coriander with a pinch of saltSummary sheet
11scoop the avocado flesh into a bowl and crush it with a fork, leaving it chunkySummary sheet
12add the lime juice and the onion mixture, combining them gentlySummary sheet
13add jalapenos to taste, and more salt if neededSummary sheet
