CAFE COUNTER: CLEANING AN ESPRESSO MACHINE

In successfully completing this unit, the learner will haveEvidence needed

demonstrated the ability to

1. fill appropriate jugs with a correct amount of cleaning solution for the steam wand

2. place the steam wand/s in a jug and turn on

3. switch off the steam and leave the wands to soak for approximately 10 minutes

4. purge the group heads and, using a brush, scrub the group head filter and edges

5. replace the portafilter basket with a blank

6. fill the blank carefully with two teaspoons of prescribed cleaning powder

7. attach the portafilter to the group head and turn the water on for 10 to 15 seconds

8. switch off the water and let the portafilter sit for 20 seconds

9. detach the portafilter carefully and rinse the blank, reattach and repeat outcomes 7-9 until the water is clean

10. empty the jugs and purge the steam wands, refill jugs with cold water and repeat outcomes 2 and 3 twice

11. take out the drip tray, once the group heads and steam wands are clean, empty it into a sink spray it down, wipe it dry and replace it in the machine

12. point out and discuss three health and safety issues and the risks involved with chemicals related to the use of an espresso machine.
